Bombay Beef Skewers

(serves 4)


500 g beef (eye of knuckle medallion, rump or blade will be suitable), cut into 2.5 cm cubes
½ cup greek-style natural yoghurt
2 T hot madras curry paste
1 T chopped coriander
8 x 20 cm bamboo skewers
1 T rice bran oil
Salad, pappadums and extra yoghurt to serve


Soak skewers in cold water for 2 hours
Combine yoghurt, curry paste and coriander. Add beef cubes
Heat oil on BBQ or heavy-based pan over medium heat
Cook skewers for 6 minutes, turning often until beef is cooked
Serve with salad, pappadums and extra yoghurt
